Their 2026 consumer research found sourdough and hand-stretched bases to be the second most preferred pizza style among UK consumers, selected by 27% of respondents - just behind Italian-style bases at 33%.
That is a significant shift for a category that, until relatively recently, was still considered more specialist than mainstream.
Trade reporting throughout 2025 also highlighted sourdough as one of the fastest-growing trends within pizza, with operators increasingly investing in slow-fermented doughs and premium crust styles.
